Sweet Potato Wedges



  • 2 to 3 sweet potatoes

  • Extra Virgin Olive Oil

  • Juice of one lemon

  • Pinch of salt

  • Oregano


Pre-heat the oven at 210º.

Wash the sweet potatoes (to remove possible dirt) and dry these afterwards. Cut the potatoes into small wedges. Don’t worry if you can’t get perfectly shaped ones.

Spread these on a lined tray. Season with about two tablespoons of olive oil (you can add so extra, if you please) and the lemon juice. Massage the wedges to make sure that all the pieces get seasoned.

Add some salt and oregano before taking the tray into the oven.

Check the potatoes and move these every now and then, so they don’t stick to the paper. Remove from the oven once these are soft.
