Ingredients (serves 4):

  • 2 eggs

  • 8 tablespoons of rolled oats

  • 150 ml milk (of your choosing)

  • 1 teaspoon of baking powder

  • Cinnamon (according to your taste)

  • Coconut oil 


Add all the ingredients in a blender and mix these until all the ingredients are properly blended together. In a non-sticking frying pan, let some coconut oil melt and remove the excess with kitchen roll.

Then it’s time to add a bit of the pancake mix. When the borders start to get golden, it’s time to flip. When the pancake is cooked on both sides, set it aside. Repeat the process with all the dough.

Serve it with fresh fruit, yoghurt, marmalade, cinnamon and lemon juice… the sky is the limit.


Cook a large batch during the weekend and freeze these, so you can have it for breakfast or snack for a few days… without having to wake up earlier or spend extra time in the kitchen.
