Ingredients (serves 2):
2 cups of almond milk (unsweetened)
Half a cup of desiccated coconut
Half a cup of chia seeds
1 tablespoon of honey
A dash of vanilla powder
Add all the ingredients in a large air-tight container, the night before you want to eat your chia pudding.
Make sure that the container is properly closed and take it to the fridge overnight.
During the night the chia seeds will hydrate and absorb all the liquid, turning its content into a pudding high on protein. In the morning remove the container from the fridge and serve it with fresh fruit.
If you like berries, you can use frozen ones in this recipe. These are cheaper and packed with nutrients, as these are frozen within 24h after being harvested.
The trick is to let them defrost in the fridge, overnight, in an air-tight container. During the process the berries will release a delicious sugar-free sauce that will make your breakfast even more delicious.
